Ingredients

  • Sailor's Choice Prawn - 1 lb
  • Canola oil - 3 tablespoons
  • Salt and freshly ground pepper
  • Green curly leaf lettuce - 12 leaves
  • Serrano-Mint Sauce, recipe follows
  • Chili oil, for drizzling (optional)
  • Fresh cilantro leaves
  • Mint leaves - 1 cup tightly packed
  • Serrano chiles, chopped - 2
  • Garlic cloves, chopped - 4
  • Fresh ginger - 1
  • Sugar - 2 tsp
  • White wine vinegar - 1/4 cup
  • Fish sauce - 2 Tbsp
  • Salt - to taste

Instructions

  1. Preheat the grill to medium-high.
  2. In a large bowl, toss prawn in oil and season with salt and pepper.
  3. Grill the prawn for 1 to 2 minutes on each side or until just cooked through.
  4. Remove the prawn from the grill and set aside.
  5. Place about 3 prawn in each lettuce leaf.
  6. Drizzle with the Serrano-Mint Sauce and with a little chilli oil, if desired.
  7. Sprinkle with a few cilantro leaves.
  8. Roll up the lettuce leaves and eat immediately.
  9. Place all ingredients, except for salt, in a blender.
  10. Pulse until smooth.
  11. Season the sauce with salt, to taste.
