Grilled Prawn in Lettuce Leaves with Serrano-Mint Sauce
An easy grilling dish with summer written all over it.
Ingredients
Sailor's Choice Prawn - 1 lb
Canola oil - 3 tablespoons
Salt and freshly ground pepper
Green curly leaf lettuce - 12 leaves
Serrano-Mint Sauce, recipe follows
Chili oil, for drizzling (optional)
Fresh cilantro leaves
Mint leaves - 1 cup tightly packed
Serrano chiles, chopped - 2
Garlic cloves, chopped - 4
Fresh ginger - 1
Sugar - 2 tsp
White wine vinegar - 1/4 cup
Fish sauce - 2 Tbsp
Salt - to taste
Instructions
Preheat the grill to medium-high.
In a large bowl, toss prawn in oil and season with salt and pepper.
Grill the prawn for 1 to 2 minutes on each side or until just cooked through.
Remove the prawn from the grill and set aside.
Place about 3 prawn in each lettuce leaf.
Drizzle with the Serrano-Mint Sauce and with a little chilli oil, if desired.
Sprinkle with a few cilantro leaves.
Roll up the lettuce leaves and eat immediately.
Place all ingredients, except for salt, in a blender.
Pulse until smooth.
Season the sauce with salt, to taste.
