Blend the lemon leaf, galangal, garlic, onion, red chilli, soy sauce, sesame oil, oil and salt at high speed in a blender to make a fine paste. This is your marinade.
Marinate the prawns with this marinade, and leave them for 15-20 minutes.
Skewer each prawn individually through the centre with the lemongrass stalks.
Heat a frying pan over medium heat and sprinkle a few drops of oil. Place the skewered prawns in the pan one by one.
Cook on each side for 2-3 minutes. Serve hot.
